About 4 years ago my husband and I went through a BLT phase. This was our first ever ‘BLT Phase’ as this sandwiches had never played an important role in our lives before. As I have mentioned before, I was never a big bacon fan but the salty, smoky combination that bacon has is a pretty winning combination. If I had known about vegan bacon years ago I would have been making that even in my pre-vegan days.
Posting a recipe for a BLT seems like a bit of a ‘cheat’ post. Is it really even a recipe? Bacon, Lettuce and Tomato between 2 slices of bread. Although questioning whether it is really a recipe is probably very unfair to whomever came up with this fantastic flavour combination. It certainly wasn’t me and if I knew who to credit I would but no one seems to know and there appear to be lots of theories about the origin of the BLT.
The main purpose of posting this is to show you that even though you may be on a vegan diet, you can still have a BLT that is every bit as good as the original.
- shiitake, portobello or field mushrooms (large ones because they shrink when cooked)
- 1 tbsp olive oil
- 1 tsp sesame oil
- 1 tsp liquid smoke
- large pinch sea salt
- Slice mushrooms thinly and separate slices as much as you can on a large plate.
- Mix remaining ingredients together in a small bowl.
- Pour marinade over mushrooms and gently rub into mushrooms making sure every slice is covered.
- Marinate for a couple of hours or more if possible or if you don't have time, about 20 minutes.
- Pre-heat oven to 160
- Spread out on a baking tray
- Cook for 20 minutes and then turn over
- Cook for 10 minutes and check
- For the next 10 minutes, check every couple of minutes because they can burn quickly
- Remove from oven and transfer onto paper towel for a couple of minutes then serve
- vegan bacon (see recipe above)
- 1 ripe tomato
- lettuce
- 2 slices of crusty gluten free bread
- sea salt and pepper
- Either toast bread or use fresh
- Butter with vegan margarine
- Add lettuce first to one slice of bread/toast
- Add tomato
- Season with salt & pepper
- Add vegan bacon
- Add other piece of bread/toast
