I love pesto so, so much. When I went vegan, I thought that this was another food that I wouldn’t be able to have but then I discovered nutritional yeast and pesto was back on the menu! There are lots of variations with basil pesto even with the same ingredients. I like mine with lots of pine nuts and blitzed until it is quite smooth and other people like it quite chunky. The quantities in my recipe are just a guide and you should taste test and use them to your personal preferences.
I have tried growing basil at home and it went quite well until my ducks decided that they like basil and it then all disappeared quickly. I think it was the same day that they discovered that coriander (cilantro) is pretty yummy too. I will try again one day when I find a spot that my sweet ducks can’t reach.
- 4 tbsp Olive Oil
- 3 cups Basil
- 1 Clove Garlic
- ¼ cup Pine Nuts
- 2 tbsp Nutritional Yeast
- Pinch of Sea Salt
- The ingredient list is just a guide because depending on how much basil you, you might need more or less oil. I usually add even more pine nuts than I have included but it all just comes down to personal taste.
- Place all ingredients in a food processor or stick mixer and blitz until smooth and well combined.
- You may have to scrape down sides a couple of times.
- Do a taste test and add extra seasoning if required. Ready to serve.
