I haven’t eaten a lot of rocky road in my life but before Christmas I was deciding what to include in a chocolate platter for a dinner party & I thought that rocky road would be a good addition. I had never made it before but the basic ingredients are pretty obvious so I went with what I thought would taste good, threw it all into melted chocolate and I was done. YUM!
Pistachios are one of my favourite nuts and they add a bit of extra colour to the rocky road which other nuts wouldn’t be able to provide.
If you can find the little vegan marshmallows then that will save you a bit of time with the sticky job of cutting them up. I use scissors to cut the marshmallows and lollies but you could use a knife.
- 320g vegan dark chocolate
- 50g shredded coconut
- 100g vegan marshmallows – chopped (if they are large marshmallows)
- 70g pistachios – chopped
- 200g vegan lollies – chopped
- Chop the pistachios, lollies & marshmallows
- Save a few pistachios and lollies for the top of the rocky road
- Melt chocolate in the microwave in a medium sized bowl
- Add all ingredients
- Mix thoroughly
- Pour into a baking dish lined with baking paper
- Sprinkle to extra lollies and pistachios on top.
- Refrigerate until set
- Cut into pieces & store in the fridge in a sealed container until ready to eat
Chocolate – I always buy mine from a Health Food Shop in big chunks of 55% dark chocolate.
Marshmallows – Dandies Marshmallows. I get these from health food shops & if you can get the mini ones then you don’t have to worry about the sticky job of cutting them up.
Pistachios – I buy salted pistachios in the shell because I like the slight saltiness with the chocolate.
Lollies – In Australia, The Natural Lolly Company have vegan lollies in their range and they aren’t expensive and can be easily found at shops including IGA.
