Open can of chick peas and drain juice, leaving about a ½ cup of juice.
Place chick peas in a bowl and heat in microwave for 30 seconds. This is the trick to light and creamy hummus. I don't know how it does it but my hummus is better than it has ever been since I have been warming the chick peas.
Place chick peas in stick mixer or food processor & add the rest of ingredients. Blitz until smooth, stopping to scrape down sides if necessary.
The hummus should be smooth, light and creamy. If not, add another splash of chick pea water and blitz again. Taste test to make sure you are happy. You can tweak the recipe now if you feel it needs more of anything.
