So summer has gone and we are almost a month into autumn but I’m not ready to say goodbye to my favourite season yet so I wanted to make something fresh and vibrant and summery and I ended up with Avocado Salsa.
I actually didn’t even know that it was a thing. Guacamole yes, but avocado salsa is not something I had come across before. I was making corn fritters (coming in my next post) and I wanted something yummy and fresh to serve with them rather than regular old salad.
I have no idea why I haven’t thought of this before because it is delicious and you could serve it with so many other dishes.
Once I had my recipe worked out, I got online to see if there were any other recipes out there and I found that I did not discover avocado salsa. Apparently it has been around for a very long time and there are a lot of different versions of the one dish.
So now I’m going to find a warm place to sit, enjoy some delicious avocado salsa with corn fritters and pretend that it is still summer.
- 2 large avocadoes chopped into small cubes
- ¼ red onion – finely chopped
- 1 baby cucumber - finely chopped (or a small piece of regular size cucumber chopped)
- 1 piece of red capsicum (about 1 inch wide) - finely chopped
- ½ cup coriander (cilantro), finely chopped
- 6 cherry tomatoes (or 1 ripe Roma tomato) chopped into small pieces
- Juice of ½ lime
- Large pinch of sea salt
- pepper
- Add all chopped ingredients to a bowl. Add lime, sea salt and pepper and mix gently so you don’t squash the avocado. Put on a platter to serve.
